Best Ever English Muffin Sandwiches

Hey Peeps! How was your weekend?
Friday I saw Avengers Infinity War and while I won't give away any spoilers, I will say that this was me throughout the film:
The rest of my weekend included work, naps, Trader Joe's, grabbing lunch at Chuy's with the hubs, and my normal coffee/grocery run.
Speaking of TJ's, check out these babies I found while browsing their frozen desserts!

You Guys.
I already had a DEEP love for their coffee ice cream, so these portion controlled sandwiches with soft brownie and chunks of crunchy chocolate chips swept me off my feet. They are a must try if you have a TJ's near you.
The rest of my Sunday was spent with Netflix and a sheet mask I chose at random from my stash:

I half expected it to be red, but it was a typical white mask with just a faint smell of red wine. My husband gets creeped out whenever he finds me relaxing in one. He says it reminds him of Jason from the Halloween movies, therefore he refers to it as "nightmare fuel". I can only image his reaction if I added a dripping red wine mask into that mix.
Earlier in the week, I got to attend an amazing Yelp Elite Event at Enchiladas Ole'. It was some of the best Mexican food I'd had in ages.

The owner Mary is a true Saint of a woman. She buys tents to give to the homeless in the wintertime, regularly brings the day's leftover food to the shelter, and even rescues stray dogs. And that's just in her spare time! The rest is spent with her family and running not only this business, but also overseeing a salsa line that can be found in North Texas Central Markets.

We enjoyed home cooked fare that tasted like it came straight from grandma's kitchen.




Afterwards, my sister and I got dessert at Steel City Pops as I had been wanting to check them out for a while.

The flavor combinations are endless. You choose either a creamy or fruity pop, then eat it straight or dip, dredge, drizzle, or dust with their array of topping choices.



They even have Cookie Pops which have a cookie in the middle of them. My sister opted for one of these and got the Chocolate Brownie cookie pop with a drizzle of caramel.
I ordered the creamy coffee pop (noticing a coffee theme with me yet??), and had it dipped into milk chocolate. (I liked how you could still see the studded ground coffee in the ice cream through the shell).


While it was delicious, I wish I had left the pop plain because the lovely coffee flavor was dulled by the overpowering chocolate.
I almost got the Buttermilk pop instead, and haven't stopped obsessing over it since. Guess I'll just have to make a return visit! Darn ;-)
For tonight's recipe, I wanted to share another food with y'all that I am currently obsessed with.. the English Muffins from Eatzi's.

I know you think I'm crazy for spending $3.50 on 4 muffins, but these are not the boring ones you can pick up from any nearby grocer.

These are dense clouds of chewy perfection, rolled in semolina for a nice crust while still maintaining a classically soft interior.
The other thing I love is that they are packed with enough oil that I can toast them by simply slicing in half and throwing them onto a dry pan. No need to worry about nonstick spray!

If I have bacon at home I will cook it in the oven and add it as well, though I find they are just as good with solely egg and cheese.
While the muffins toast bottoms down on a medium hot skillet, take a slice of pepper jack cheese (or your fav) and fold it evenly into 4 pieces.


I lay them on a small piece of foil which will become important later.
Once the muffins start to turn golden brown, I flip them over to let the insides toast while I get the egg mixture ready.

I'm not a yolk person, so I use only the whites.

I separated 3 by hand, then added them to a bowl with a generous pinch of red chili flakes.

By the time the insides of the muffin were golden enough for me, I flipped them back over on the bottoms and added my cheese (2 pieces per half).


Remove the muffin from the skillet and place onto your foil sheet, closing it to retain heat. This will help the cheese melt evenly without overly browning the outsides.

Use nonstick spray now for the same skillet you used to toast the muffin, and add your egg mixture. The pan will still be hot, so keep in mind the eggs will cook quickly.

When they are fully cooked to your liking, remove from the heat and unwrap the foil. By now your cheese should be melted nicely.

Open your sandwich, add your cooked eggs, season with salt and pepper to taste, and close back up until ready to eat. *Bonus, makes for a perfect on the go meal since the foil keeps it nice and warm until you are ready.


Grab some coffee, unwrap, and enjoy!

You will never be able to go back to the grocery store muffins again after one of these babies.
